We love quick and easy recipes for little hands and mouths.  These mini quiches are so easy to prepare - all you need is 25 minutes and some basic ingredients that you probably already have in the fridge!  Beat the little hunger tantrums, carry them with you on little trips, or use as a great alternative to sandwiches in your littleies lunch boxes.

We found this recipe over at The Organised Housewife (because she keeps us organised and sane!)

  • 4 sheets puff pastry, thawed
  • 1 teaspoon oil
  • 4 rashers bacon
  • ½ onion, finely chopped
  • 1 cup tasty cheese, grated
  • 4 eggs
  • ½ cup milk

  1. Preheat oven to 180C
  2. Spray a 24 hole mini muffin tin with cooking spray
  3. Place oil in small frying pan over medium heat
  4. Cook bacon and onion until bacon has browned, allow to cool
  5. Using a 2⅝” circle shaped cutter cut out 24 rounds of pastry
  6. Place pastry in each muffin hole
  7. Place a small spoonful of bacon and onion mixture into each hole
  8. Sprinkle with pinch of cheese
  9. Whisk milk and eggs together in a jug
  10. Pour egg mixture into pastry cases just below the top (allowing room for egg mixture to rise)
  11. Bake for 12-15 minutes or until browned on top
